Modify menus or create new ones that meet quality standards
· Estimate food requirements and food/labor costs
· Prepare and execute cooking for small and large scale events
· Supervise kitchen staff activities
· Arrange for equipment purchases and repairs
· Recruit and manage kitchen staff
· Rectify arising problems or complaints
· Perform administrative duties (ie. Weekly product ordering, month end inventory duties, scheduling, completing purchase orders and responding to emails)
· Keep time and payroll records for kitchen
· Maintain a positive and professional approach with coworkers and customers
· Setting and monitoring performance standards for staff.
· Manage and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order
· Ensure that food products, presentation, taste and plating are of the highest quality, and are prepared to serve in a timely manner
· Assure adherence to all safety standards of food quality, preparation, recipes, and presentation in conjunction with the specifications.
· Monitor holding and storage operations, stocking and food rotation, and guarantee food service sanitation standards are met
EXPERIENCE, SKILLS AND EDUCATIONAL REQUIREMENT:
· Formal culinary training or degree/certification in culinary arts. (Red Seal preferred)
· Minimum 2-5 years in a similar position in a dining/banquet environment and/or experience
· Proficient knowledge of human resource management
· Ability to meet deadlines
· Ability to communicate clearly with other managers, kitchen and dining room employees and guests.
· Safe food handling certification
· Knowledge of various computer programs (MS Office, POS)
· Ability to bend, stand, and stoop for long periods of time and working in hot conditions.
· Must be a responsible, organized individual who can work with minimum supervision and display confidence in dealing with stressful situations;
· Must have experience calculating figures and amounts and performing mathematical functions as required.
· Must be honest, reliable and dependable;
· Must be able to work days, evenings, weekends and holidays when required.
