Most business owners understand the importance of sustainability, but the trouble is knowing where to start. This session introduces sustainability practices that are accessible, make good business sense, and help businesses meet expectations that visitors increasingly look for. The goal is to give practical, achievable tools for running more sustainable operations within the food and beverage industry. 
 

About Your Hosts: 

Alex Blagdon is the culinary director of The Cape - a newly opened food & hospitality business which is rooted in low-waste food practices and hyper-local sourcing. Alex's passion for food began in the forest and shores of Newfoundland and took her to kitchens worldwide. Trained in restaurants, villas and farms, she mastered her art and how to minimize food waste. 

Rebecca Brushett is the founder of the Atlantic Healthy Oceans Initiative and co-owner of Gros Morne Inn, Taste of Gros Morne, and Tour Gros Morne, with over 20 years of experience bridging marine science, policy, and on-the-ground operations. With a strong background in marine biology and coastal conservation, her work is deeply rooted in ocean health and community stewardship, and she has helped shaped a model connected to the United Nations Sustainable Development Goals for low-impact, high-quality visitor experiences grounded in local culture and environment. Her work focused on supporting tourism operators to reduce waste, eliminate single-use plastics, and implement reused and refill systems in partnerships with local suppliers. She has led a shift toward serving responsibly sourced local seafood from health fish stocks, achieving Ocean Wise certification across operations. 

Together they show that sustainability can look different depending on your operation, and that there’s no single right way to start.
