Job Description

A member of Relais & Châteaux with Three MICHELIN Keys, Fogo Island Inn is a 29-room luxury hotel, built on principles of sustainability and respect for nature and culture. The Inn is a community asset, owned by the charity Shorefast, and 100 percent of operating surpluses are reinvested into Shorefast’s work to secure a resilient future for Fogo Island.

Our work has garnered significant international interest including a feature on 60 Minutes and in The New York Times’ 52 Places for a Changed World. The mission of Shorefast is to build, learn, and share economic development practices that catalyse the assets of local places, starting with Fogo Island.


Job Description

 


THE OPPORTUNITY (multiple positions available)

As Pastry Chef, you will bring a passion for baking and pastry arts, attention to detail, and the ability to create visually stunning and delicious desserts that align with the Executive Chef’s culinary vision. You will oversee all pastry operations, including menu development, execution of pastry dishes, and managing a talented team of pastry cooks. You bring an expertise in a range of pastry disciplines, including chocolate work and bread baking.

 


WHAT YOU’LL DO

  • Lead the Pastry Team, overseeing the production of all pastries, desserts, bread, and other baked goods, ensuring they meet Fogo Island Inn’s standards.
 

 

  • Develop and create innovative dessert menus, including seasonal and special offerings that reflect both classic and modern pastry techniques.
 

 

  • Manage and mentor a team of pastry cooks, providing training, guidance, and support to ensure the consistent quality of all dishes.
 

 

  • Ensure all pastry items are prepared with precision and beautifully presented for an exceptional guest experience.
  • Monitor and maintain the quality and freshness of ingredients, ensuring proper inventory management, stock rotation, and waste control.
  • Collaborate with the Executive Chef and other culinary team leaders on overall menu planning and food presentations.
  • Oversee the execution of all pastry orders during service, ensuring dishes are completed on time, plated perfectly, and consistently meet expectations.
  • Stay up to date with pastry trends, techniques, and ingredients to continually innovate and enhance the restaurant's pastry offerings.
  • Other Duties as required.

Qualifications


QUALIFICATIONS AND EXPERIENCE

  • About 4-5 years of experience as a Head Pastry Chef, Executive Pastry Chef, or in a similar Leadership role in a high-end restaurant, bakery, or hotel (or equivalent).
  • Formal pastry or culinary training from an accredited institution preferred.
 

 

  • Experience working in Michelin-stared or awarded establishments preferred.
  • Strong expertise in a wide range of pastry, baking, and dessert techniques, from classical to modern.
  • Ability to create visually stunning and delicious pastries, desserts, bread, and baked goods.
  • Excellent leadership and management skills, with experience leasing and mentoring a team in a high-pressure kitchen environment.
  • Ability to work flexible hours, including evenings, weekends, and holidays, as required but the business.
  • Exceptional attention to detail and a commitment to producing consistently high-quality dishes.
